Ingredients
2 chicken breasts (about 400g / 14 oz), diced into bite-sized pieces
2 tablespoons avocado oil (or olive oil)
1 medium onion, chopped
2 large carrots, diced
2 celery stalks, diced
2 medium sweet potatoes (about 300g / 10 oz), peeled and diced
2 cups (480 ml) bone broth (or water if preferred)
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon turmeric powder
Salt, to taste
Fresh parsley, chopped for garnish
Directions
- Tenderize the chicken breast if desired, then season lightly with salt.
- Heat 1 tablespoon of avocado oil in a large pot over medium-high heat. Add the chicken pieces and sear them for about 4–5 minutes, turning to brown on all sides. Transfer the chicken to a plate and set aside.
- In the same pot, add the remaining tablespoon of avocado oil. Add the onions, carrots, and celery. Sauté for 5–6 minutes until the onions are soft and translucent.
- Add the chicken back in, along with the bone broth, thyme, rosemary, turmeric, and salt.
- Bring the stew to a boil, then reduce to a simmer. Cover the pot and cook for 20–25 minutes, until the vegetables are tender and the chicken is cooked through.
- Add the sweet potatoes to the pot, stirring for another 7-10 minutes or until it is fork tender.
