Ingredients (Serves 4)

  • 1 can (24) escargots, drained and rinsed
  • 4 garlic cloves, mashed into a paste
  • 8 tbsp ghee, divided
  • 1 tsp sea salt
  • ½ tsp kelp
  • 4 tbsp nutritional yeast

Optional: 1 tbsp fresh parsley or tarragon for added herb flavor


Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C).
  2. Prepare the Escargots
    Drain the escargots and rinse them under cold water to remove any brine. Set aside to dry.
  3. Make the Garlic Mixture
    In a small bowl, mash the garlic with sea salt and kelp until it forms a paste. If using, mash in the fresh parsley or tarragon for added flavor.
  4. Assemble in the Dish
    Using an escargot dish, divide 1 tbsp of ghee into 6 portions, placing one portion in each hole. Add a small amount of the garlic/salt/kelp mixture on top of the ghee in each hole. Place one escargot in each hole and top it again with the remaining ghee.
  5. Bake
    Sprinkle 1 tbsp of nutritional yeast over each escargot. Place the dish in the oven and bake for 15-20 minutes, or until the escargots are heated through and bubbling.
  6. Serve
    Serve warm with AIP bread to soak up the delicious garlic-infused ghee.

  • 1/8 tsp kelp

  • 4 tbsp nutritional yeast

Directions

  • Preheat the oven to 350 F.
  • Drain the escargots of water and rinse with cold water.
  • Mash the garlic to a paste and add salt and kelp.
  • Using an escargot (snail) dish, divide one tbsp ghee into 6 portions and place one portion in each hole.
  • Place a small portion of the garlic/salt/kelp mixture in each hole, on top of the avocado oil.
  • Place an escargot in each hole and top it again with oil.
  • Sprinkle 1 tbsp nutritional each on each dish, on top of each escargot and place in the oven.
  • Bake for 15 – 20 minutes. Serve warm with AIP bread.
